PANEER CUTLET


Ingredients 
Paneer - 1 cup (frozen, shredded)
Potato - 1 nos (big, boiled, peeled & smashed)
Big onion - 1 nos (small-sized, finely chopped)
Green chilies - 1 nos (finely chopped)
Ginger - 1 tsp (chopped)
Garlic - 1 tsp (chopped)
Coriander leaves - 2 tsp (chopped)
Pepper - 1/2 tbsp
Egg - 1 nos (beaten)
Breadcrumbs - 1/2 cup
Oil - as needed
Salt - as needed


Method
Pour 1 tsp oil in a pan, add onion and fry till onion becomes golden brown in color. Now add Ginger, Garlic, Green chilies and mix well for 2 mins. Put stove in sim mode, add potato, shredded paneer, coriander leaves, pepper, salt and switch off the stove. After 5 mins, make small balls out of it. Beat egg in a bowl, dip the balls in egg and then roll it on breadcrumbs. Fry the balls in oil till it becomes golden brown in color (in medium flame). Serve the hot cutlet with tomato ketchup.

Note 1: Replace 1 cup paneer with 1 cup of mixed vegetables: carrot, cabbage, capsicum cut into small square pieces and green peas to make vegetable cutlets.

Note 2: Replace 1 cup paneer with 1 cup of cooked and smashed boneless chicken/meat/fish to make chicken/meat/fish cutlets. Add also 1/2 tsp Garam masala powder while preparing the mixture for the favorable flavor.
