POTATO COOKED IN COCONUT MILK MASALA


Ingredients
Potato - 1 medium (boiled, skinned, smashed)
Onion - 1 medium (cut into thin pieces)
Green Chilly - 2 (slit, cut into small pieces)
Ginger garlic paste - 1 tsp
Turmeric powder - 1/4 tsp
Chilly powder - 1 tsp
Coriander powder - 1 tsp
Garam Masala - 1/2 tsp
Salt to taste
Coconut milk powder:
1. Mix 1 tbsp in 1 cup warm water - Thin liquid
2. Mix 1 tbsp in 1/2 cup warm water - Thick liquid
Oil - 1 tbsp
Mustard seeds - 1 pinch
Urad dhal - 1 pinch
Curry leaves
Coriander leaves


Method
Heat oil in a broad bottomed non-stick pan. Crackle mustard seeds, add urad dhal and curry leaves. Now add onion, chilies and saute well until onion turns translucent. Add gg paste and mix well. Add all powders and salt and fry well until raw smell goes in medium to low flame. Now add potato and the thin liquid coconut milk. Let it boil for 5-10 minutes. Put the stove in sim and add thick liquid coconut milk powder and garnish with coriander leaves. When desired curry consistency is reached, off the stove. Serve hot with Idiapam or Appam.
