MUSHROOM POTATO MASALA


Ingredients
Potato: 2 medium small sized (half boiled (10 mins) and very small cubed ~2 cups)
Sliced mushroom - 1 cup (I used canned mushrooms)
Onion - 1 large (finely chopped)
Ginger paste - 1 tsp
Garlic paste - 1 tsp
Chilly powder - 2tsp
Coriander powder - 1.5 tsp
Turmeric powder - 1/4 tsp
Garam masala powder - 1.5 tsp
Soya sauce - 2 tsp
Salt as needed
Oil - 1 tbsp refined
Coriander leaves chopped to garnish
Water - 2 cups


Method
Heat oil in a pan and saute onions until they are golden brown. Add ginger-garlic paste and saute until raw smell goes away. Now add in all the masala powders and saute in medium low flame. Once the masala is sauteed well, add in the cubed potatoes, little water and salt. Mix well, cover and cook  for about 5 minutes on medium low heat. Check in between. Now add in the mushrooms, remaining water. Cover and cook again for 5 mins. Once mushrooms are cooked, add soya sauce and off the flame. Garnish with chopped coriander leaves. Serve hot with Appam or Roti.
