Spicy Chicken Afritada
Ingredients:
Chicken - 500g boneless cubed
Carrot - 1 cubed
Potato - 2 medium peeled and cubed
Green chilies -3 sliced
Garlic - 4 pods finely chopped
Onion - 1 medium sliced
Tomato paste - 2 tsp scooped
Soya sauce - 2 tbsp
Chilly powder - 1/4 tsp
Pepper powder - 1.5 tsp
Tomato ketchup - 1/2 tsp
Magic Sarap
Salt - 1tsp
Sunflower oil - 2-3 tbsp
Water - 1 cup
Method:
1. Marinate chicken with 1/2 tsp pepper powder, Soya Sauce, magic sarap (4 pinches) for 30 minutes.
2. Heat oil in a broad pan, shallow fry carrot, potatoes and keep them separate
3. In the same oil, saute garlic followed by onion.
4. Add marinated chicken, salt and cook until chicken is done.
5. Add cooked vegetables, green chilies, tomato paste, chilly powder, magic sarap (3 pinches), 1 tsp pepper powder, tomato ketchup, and water.
6. Cover and cook until done. Check salt now.
7. Serve hot with chapati or fried rice.
