Special Spicy Chicken Fry / Roast

Ingredients:
Whole Chicken - 1 kg (Clean and cut in to medium sized pieces)
Big onion - 3 big sliced
Green chilly - 2 sliced
Tomato - 3 big ripe, chopped finely and cubed
Ginger garlic (GG) paste - 2 tsp scooped up
Cardamom - 3
Cloves - 3
Cinnamon stick - 1 inch piece
Turmeric powder - 1/2 tsp
Garam masala powder - 3/4 tsp
Red chilly powder - 2 tsp
Coriander powder - 2 tsp
Cumin powder - 2 tsp
Salt - 2.5 tsp
Curry leaves - 2 flakes
Coriander leaves
Coconut oil - 2 tbsp
Coconut milk powder - 1 tbsp ( mix in 1/4 cup of water)
Water - 1/2 cup if needed



Method:
1. Heat coconut oil in a non stick pan, add cinnamon stick, followed by cardamom, cloves and saute.
2. Add onion, green chilies, curry leaves, GG paste and saute until onion turns translucent.
3. Now add tomato pieces followed by all dry powders, and salt
4. Roast until tomato is cooked and soft
5. Add the cleaned chicken and let it boil. once boiled, add little water if needed. Cover and cook until chicken is cooked.
6. Now add the coconut milk and cook until water evaporates to make a roast as shown above.
7. Roast little more time to make it a dry fry.
8. Saute with coriander leaves and serve hot with rice/roti.
