CHICKEN CAESAR SALAD




Ingredients:

Lettuce - 3 cups chopped
Cherry tomatoes - 1 cup or 1 tomato chopped

For Salad dressing:
Mayonnaise - 2 tbsp
Parmesan cheese - 2 tbsp grated
Olive oil - 2 tbsp
Fresh lemon juice - 1 tsp
Pineapple juice - 2 tbsp (I used the juice from a pineapple chunks can)
Pepper powder - 3 pinches
Salt to taste - 3 pinches

For chicken marinate:
Boneless chicken breast - 2 medium-sized pieces, chopped into cubes
Olive oil - 2 tsp
Salt  - 1/2 tsp
Pepper powder - 1/4 tsp
Chaat masala - 3-4 pinches

Method: 

Chop and keep lettuce and tomatoes aside. Combine all the ingredients for making salad dressing, blend well together and keep aside (refrigerate if needed for up to 2 days).

Marinate chicken and keep aside for 5-10 minutes. Cook chicken by adding little olive oil.



Just before serving, combine lettuce tomato mix, salad dressing and chicken. Sprinkle some more chaat masala if needed.
