SPICY MANGO PICKLE

SPICY MANGO PICKLE


Raw Green Mango: 4-5 medium sized (wash the mangoes well, wipe with a kitchen towel, and cut them into small cubes; skin-on)

Red chilly powder - 4-5 tsp (spicy one)

Mustard powder - 1 tsp

Salt - 2 tsp

Sunflower oil - 1 cup

Mustard seeds - 1/2 tsp

Fenugreek seeds  - 1/4 tsp

Asafoetida powder - 1/4 tsp

Dried red chilly - 1 broken

Garlic - 3-4 pods finely chopped

Vinegar - 1 tsp


METHOD:

- Heat oil in a pan, crackle mustard seeds, followed by garlic, fenugreek seeds, red chilly, and asafoetida. Fry for a minute or less (until garlic start to turn brown)

- Remove pan from flame, add chilly powder, mustard powder, salt to it and mix well for a minute (for the raw-smell of powders to go). 

- Add mango pieces, vinegar and mix well

- Let it cool down completely before transferring to an air tight container for storage
