GHEE RICE || NEYCHORU


Ingredients
Basmati Rice - 2 cups
Onion - 1 medium sliced
Ghee - 3 tbsp
Cloves - 3 nos
Cardamom- 2 nos
Cinnamon stick - 2 inch piece broken
Bay leaf - 1
Mace - 1
Water to cook rice
Salt as needed - ~1.5 tsp
Cashew nuts - few
Raisins - few


Method
1. Boil water with salt, bay leaf, mace
2. In the same time, heat 2 tbsp ghee in a frying pan
3. Add cloves, cardamom, cinnamon sticks and saute for a minute
4. Add the sliced onions and saute till it turn translucent
5. Now add the washed and cleaned rice and fry for 2 minutes
6. Transfer this to the boiled water and cook until rice is done
7. Filter out extra water from rice and keep the rice aside
8. Heat 1 tbsp ghee in a small pan and roast cashew nuts and raisins
9. Garnish the rice with fried nuts and serve hot
