Lemon Basil Chicken

Ingredients:
Boneless skinless chicken breast - 500 g, sliced horizontally and cubed

To Marinate chicken:
Chilly powder - 1/2 tsp
Turmeric powder - 1/2 tsp
Pepper powder - 1 tsp
Garlic powder - 1 tsp
Basil flakes - 4-5 flakes
Lemon juice - 2 tsp
Soya Sauce - 1 tbsp
Salt - 1 tsp

Coconut oil - 2 tbsp
Tomato - 2 medium sliced
Capsicum - 1/2 portion sliced
Onion - 2 medium sliced
White/Red kidney beans - 1 can (cooked), remove oil
Water - 1 cup



Method:
1. Marinate chicken for 30 minutes
2. Heat 1 tbsp oil in a pan, cook chicken in low-to-medium flame until it is done.
3. In another pan, add the balance 1 tbsp oil and saute the sliced vegetables, sprinkle some salt.
4. Once the vegetables are done, add the cooked chicken, cooked beans into it, add water, cover and cook for 5-10 minutes.
5. Serve hot with Rice/Chapatti or eat as it is.
