HOME-STYLE MANGO PICKLE

The base recipe of this Home-Style Mango Pickle is from my Mom's kitchen. However, I skip few of her ingredients and added vinegar to make this version.



INGREDIENTS:
Raw Green Mango: 500g or 4-5 small sized
Red chilly powder - 1.5 tsp
Turmeric powder - 1 tsp
Salt - 1 tsp
Gingerly oil - 4 tbsp
Mustard seeds - 1 tsp
Fenugreek seeds and cumin seeds - 2 pinches each (dry roast and grind to powder)
Asafoetida - 1/4 tsp
Dried red chilly - 1 (Optional)
Curry leaves - 1 flake (Optional)
Vinegar - 1/4 tsp

METHOD:
- Wash the mangoes and wipe with a kitchen towel
- Cut the mango into small cubes skin-on.
- Add salt, chilly powder, turmeric powder to mango pieces. Mix well and keep it aside
- Heat oil, crackle mustard seeds, followed by red chilly broken into small pieces
- Add fenugreek and cumin powder, asafoetida and mix for 30 seconds
- Add few curry leaves if needed
- Off the flame, add mango pieces, vinegar and mix well
- Let it cool down completely before transferring to an air tight container for storage

NOTE: Usually I won't add red chilly and curry leaves.
