FENUGREEK CHICKEN CURRY


Ingredients
Chicken - 450 g boneless chicken (cut into small cubes)
Fenugreek seeds - 1/2 tbsp (soak in hot water for 30 minutes, 2 times)
Onion - 2 medium (sliced, chopped finely)
Ginger-Garlic  - 2  tbsp (chopped finely )
Green chilies - 4 nos (chopped)
Chilly powder - 1 tsp
Coriander powder - 1.5 tsp
Turmeric powder -  1/4 teaspoon
Coconut milk - 1 cup (Mix 1.25 tbsp coconut milk powder in 1 cup warm water)
Coconut oil - 2 tbsp
Vinegar - 1 tsp
Salt to taste
Coriander leaves to garnish (chopped 1 tbsp)



Method
Heat oil in a non-stick cooking pan. Add chopped onion, ginger, garlic, green chilies and saute till onion turn translucent. Now add fenugreek seeds (discard the water in which it was soaked) and saute for a minute. Add chilly powder, coriander powder, turmeric powders and saute. Once the raw smell disappears, add chicken and mix well. Fry till the color turned slight brown and then add salt to taste. Add coconut milk, stir and cover and cook the chicken in low flame till it is done. Once the chicken is cooked and the gravy thicken well, add vinegar. Put in sim for couple of minutes.
