THAI CHICKEN LETTUCE WRAPS


INGREDIENTS
Boneless chicken - 450 g (cut into small pieces length-wise)
Onion - 1 medium (chopped finely)
Garlic - 4 cloves  (chopped finely)
Cashew nuts - 5 no.s (dry roasted)
Soy sauce - 1 tbsp
Sugar - 1/2 tsp
Coriander leaves - 1 tbsp chopped

Oil - 2 tbsp 
For Sauce:
Thai sweet chili sauce - 3 tbsp
Lemon juice - 2 tsp
Coriander leaves - 1 tbsp chopped
White sesame seeds/dry roasted chopped peanuts - a pinch to garnish





METHOD
Mix all the ingredients for the Sauce in a small bowl, set aside. Heat pan on medium heat and add the oil. Add the onion, garlic and stir-fry until onions turn translucent. Add the chicken, stir fry till it is cooked well. Once the chicken is cooked add in the cashew nuts, sugar, soy sauce and salt. Stir well to blend the sauces well and the sauce dries up. Add in coriander leaves and remove from flame. Allow to cool down a bit. Take one kubose, add 1 tbsp of the filling onto the middle, top with some sauce. Wrap it as a roll and eat immediately. The filling can be kept between 2 loafs of bread, press it, and grill in a sandwich toaster.
