VEGETABLE SCRAMBLED EGG


INGREDIENTS
Eggs - 4
Onion - 2 medium sliced thinly
Capsicum - 1 medium sliced thinly
Tomato - 2 medium sliced thinly
Green chilies - 2 sliced and chopped finely
Pepper powder - 1-2 tsp
Salt to taste
Chilly powder - 1/4 tsp
Olive oil - 2 tsp


METHOD
1. Chop the vegetables and keep aside
2. Heat oil in a pan and fry the vegetables until they are half cooked
3. Sprinkle some salt and pepper over it
4. Beat egg with salt, pepper powder, and chilly powder and pour over the cooked vegetables
5. Cook until the eggs are done and serve hot as it is or make sandwich with wheat bread
