VEGETABLE MASALA


Ingredients
Set A
Carrot - 1 (medium-sized, peeled and cut into cubes)
Beans - 100g
Beetroot - 1 (medium-sized, peeled and cut into cubes)
Cabbage - 100g
Cauliflower - 100g
Potato - 1 (medium-sized, peeled and cut into cubes)
Tomato - 1 (remove seeds)
Big Onion - 2 (small-sized)
Green chillies - 2
Capsicum - 1/2
Set B
Turmeric powder - 1/2 tsp
Chilly powder - 1 tsp
Ginger-garlic paste - 1 tsp
Garam masala pwd - 1 tsp
Coconut grated - 1 tbsp + 2 small onion + 2 gralic pods + 2 pinches of cumin grinded. 
Salt as needed
Oil, mustard seeds, urad dhal, curry leaves
Water - 1 1/2 cup
Coriander leaves.




Method
Chop the vegetables as shown above (Set A). Cook them with 1/2 cup water in a heavy bottomed pan and salt for 15 minutes by closing the pan with lid. Mix in between. Now add add dry powders, gg paste, coconut paste and 1 cup water and cook for another 5 minutes. Saute with items 17 and coriander leaves.
