SCRAMBLED VEGETABLE EGG || EGG BURJI


Ingredients
Eggs - 5
Onion - 1 big, finely chopped
Tomato - 1 ripe medium, remove seeds, finely chopped
Green chilly - 1 small, slitted and finely chopped
Coriander leaves - chopped
Pepper powder - 1/2 tsp
Chilly powder - 1/4 tsp
Salt - 3/4 tsp
Coconut oil - 2 tsp
Mustard seeds, black urad dhal, red chilly (2), curry leaves.



Method
Heat oil in a pan, crackle mustard seeds. Add black urad dhal, broken red chilies, and curry leaves. Now add onion, green chilly and mix well until onion turns golden brown. Add tomato pieces and cook until it is done. Beat eggs in a bowl and pour into the cooked mixture. Add salt, pepper pwd, chilly powder and cook until eggs are done.
