FILLED BANANA TWIST || UNNAKKAYA


I heard this name Unnakaya for the first time when my colleague Lubuna made this snack and bought to office. It was so tasty that from that day I really wanted to prepare this and it just happened yesterday and we really loved the filling.


Ingredients
Kerala banana - 3 medium sized (well-ripen)
Egg - 1
Sugar - 4 tsp
Ghee - 1 tsp
Coconut - 1/2 cup
Cashews - 10 nos broken
Oil to shallow fry


Method
Steam bananas in a pressure cooker for 3 whistles. Remove the skin. Cut the bananas vertically and remove the black seeds and smash the bananas in to a fine paste. Add 1 tsp sugar and make lemon sized balls out of it and keep it aside. Beat Egg and 1tsp sugar in a bowl and keep it aside. In a frying pan, add 1 tsp ghee and fry the cashews till they turn to golden brown and keep them separate.

In the same pan, add coconut, 2 tsp sugar and fry till it turns to golden brown. Now make a well in the middle and pour-in the egg mixture and mix well so that the mixture is well spread. Fry the mix till it becomes dry. Now add the cashews and turn off the stove. Take a banana ball and flatten it in your palm and fill a small portion of coconut mix in it and tightly seal them to form a oval shape. Make 4-5 similar filled bananas and shallow fry in oil till the slides turns to golden brown. Serve the sweet Filled Banana Twist with a cup of Tea.
