SHALLOW FRIED POTATO MASALA
This is a version of potato curry without pre-boiling the potatoes. Potato is shallow fried and the masala is dry roasted which gives a nice aroma.
Ingredients
Potato - 1 big (skin peeled off and cut into very small cubes) - Wash and clean also.
Big Onions - 2 medium - very thinly sliced
Green chilies - 2 very thinly sliced and chopped
Curry leaves - 1 flakes
Sunflower oil - 3tbsp + 1 tbsp
Mustard seeds - 1/4 tsp
Urad dhal - 1/4 tsp
Ginger Garlic paste - 1tsp
Chilly powder - 1 tsp
Coriander powder - 1 tsp
Turmeric powder - 1/4 tsp
Garam masala powder - 3/4 tsp
Salt - 1 tsp
Coconut milk powder - mix 1 tbsp powder in 1/2 cup water
Coriander leaves
Water - 1-2 cups
Method
Heat 3 tbsp oil in a broad non-stick frying pan. Crackle mustard seeds and Urad dhal and then add the cleaned potato pieces. Mix and fry until it turns very light brown in color in medium flame. Now add the sliced onion, green chillies and curry leaves and 1 tbsp oil. Fry until onion turns light brown. Now add ginger garlic paste and mix for a minute. Add chilly powder, coriander powder, turmeric powder, garam masala, salt. Mix well for 1-2 minutes. Now add 1.5-2 cups of water and mix well and let the mixture cook for 10 mins. Mix in between. Add the coconut mix powder and heat the curry for 4-5 minutes. Garnish with Coriander leaves and server hot with Appam/Idiappam.
