THEEYAL || KARUTHA KULAMBU || VATHA KULAMBU
Ingredients:
Small onion - 10
Garlic - 5 pods
Items A:
Chilly powder - 1 tsp scooped up
Coriander powder - 2 tsp
Turmeric powder - 1/2 tsp
Whole pepper - 1 tsp
Cumin seeds - 1/2 tsp
Gingerly oil - 2 tsp + 3 tsp
Mustard seeds - 1/2 tsp
Fenugreek seeds - 1/2 tsp
Curry leaves - 1+1 flakes
Asafoetida - 5 big pinches
Tamarind - 1 big ball (add in a bowl with little water and microwave for 20 seconds before using)
Mango vattal - 4-5 soaked
Salt 1.5 tsp or as needed
Method:
- Heat 2 tsp oil in a pan. Add onion, garlic, 1 flake of curry leaves and saute for a while
- Then add Items A and fry for few minutes (~3-4 mins)
- Off the stove and let it cool down
- Once cooled, grind in a mixer by adding little water to a smooth paste and keep aside
- Heat 3 tsp oil in a deep bottomed pan, crackle mustard seeds, followed by fenugreek seeds and curry leaves.
- Add the grinded paste, asafoetida, tamarind, mango vattal, salt and 5 cups of water to it.
- Cook until the mixture quantity becomes half.
- Check salt and add little more if needed and serve hot with rice.
