MUSHROOM EGG SANDWICH


Ingredients
White bread - 6 slices (makes 3 sandwiches)
Mushrooms - 1 small can (chop it in to pieces of desired size)
Egg - 1
Green chilies - 2 (chopped as small as possible)
Black pepper powder - 1 tsp
Salt to taste
Cheddar Cheese - 2 tbsp
Coriander leaves - chopped (1 tbsp)
Butter - 3 tbsp
Oil



Method
Heat oil in a pan on medium heat. Add the chopped mushrooms and saute for a few minutes until water has evaporated (mushrooms give out water while being cooked). Add the egg, green chilies, salt and pepper; mix until egg is cooked well. Turn off heat, add cheese and coriander leaves, mix and set aside. Spread the butter on the slices of bread. Add about 2 tablespoons of the mushroom mixture on one slice and cover with the other slice and grill using a sandwich toaster. Enjoy the sandwich with tomato ketchup.
