CHICKEN FRY


Ingredients
In-bone chicken - 1 kg cut into small to medium-sized pieces
Onion - 1 medium sliced
Green chilies - 4 no.s slitted
Curry leaves  - 4 sprigs
Coconut oil - 4 tbsp
Coriander leaves - few

For chicken marinade
Turmeric powder - 1/2 tsp
Chilly powder - 1 tbsp (add more if you prefer it more spicy)
Garam masala powder - 1tsp
Pepper powder - 1 tbsp
Fresh ginger paste - 1tbsp
Fresh garlic paste - 1 tbsp
Yogurt - 1 tbsp
Mint leaves - few
Red food color - a pinch (optional)
Salt to taste (1 or 1.5 tsp)




Method
Clean the chicken pieces and mix with the marinade ingredients for an hour or two. Heat oil in a deep-bottomed frying pan and fry the sliced onions, curry leaves and green chilies. When the onions starts to become brown, remove them from the pan and keep aside. In the same pan, add marinated chicken pieces. Close and cook for 5 minutes, then shallow fry the chicken until the pieces become golden brown. Garnish with the fried onions, green chilies, curry leaves and coriander leaves. While serving, squeeze a few drops of lemon juice if desired.
