SPECIAL VEGGIE CHICKEN FRY


Ingredients
Chicken - 500 g boneless skinless (chopped)
Mushroom - 1/2 cup (sliced thinly length-wise)
Green capsicum - 1/2 cup (chopped thinly length-wise)
Jalapeno pepper - 1 (sliced - take out seeds from half of it)
Onion - 1 medium (chopped finely)
Ginger Garlic paste - 1 tsp
Red chilly powder - 1 tsp
Coriander powder - 1 tbsp
Turmeric powder - 1/4 tsp
Tomato ketchup - 1 tbsp
Oil - 2 tbsp
Salt as needed



Method
Heat oil in a tawa and fry the chopped onion until they are golden brown. Now add in the ginger-garlic paste and saute until its raw smell goes away. Add chilly powder, coriander powder, turmeric powder and saute for a minute. Add the cleaned and chopped chicken pieces along with salt. On medium-high flame, cover and cook well until chicken is almost cooked. Now add in chopped capsicum, sliced mushrooms, and tomato sauce. Cook until the veggies and chicken are cooked and the dish is almost dry in medium-low flame. Finally add in sliced jalapenos and saute little more until they are soft. Garnish with chopped onion if desired and serve hot with Rice.
