CHICKEN KOTHU PAROTTA


Ingredients
Parotta - 2 (left over)
Chicken curry – 1/2 cup gravy and  2-3 medium chicken pieces
Onion -1 medium chopped
Tomato - 1 medium chopped
Green chilly - 1 finely chopped
Garlic – 1 clove chopped
Ginger – 1/4 inch, chopped
Garam masala pwd, chilly pwd, pepper pwd - few pinches
Egg - 1
Lemon juice - 1tsp
Tomato ketchup - 1tbsp Curry leaves – 1 sprig
Coriander leaves
Oil - 1 tbsp
Salt  to taste


Method
Tear the parotta into pieces. Take out the chicken pieces from the chicken curry and tear into small pieces. Set aside. Heat oil in a pan at medium heat. Add onion, garlic, ginger, green chilly and little salt. Saute until onion becomes golden brown. Add tomatoes and cook for a minute. Add the parotta pieces and mix well. Next add the shredded chicken along with the gravy. Mix well and stir for a minute. Move them aside and break an egg into the pan. Add a pinch of salt and pepper. Scramble eggs and then mix everything together. Add curry leaves, coriander leaves and a tsp of oil. Continue to stir-fry for 1-2 minutes. Now add lemon juice, tomato ketchup and mix well. Off the stove and keep the pan closed with lid. Serve hot with raita.

NOTE: If you do not have chicken gravy, add some water and after you add chicken pieces, add 1/4tsp each of garam masala pwd, chilly pwd, coriander pwd, turmeric pwd, pepper pwd and mix well.
