CASHEW NUT PULAO || KAJU PULAO


Ingredients
Basmati rice - 1 1/4 cups
Cashews - 15 nos
Ghee - 2 tsp
Oil - 1 tsp
Cumin seeds - 1 tsp
Ginger - 1 tbsp grated
Green chilies - 2 nos, slitted
Water - 2.5 cups
Salt as needed - ~ 1tsp
Spring onions - chopped


Method
Soak rice for 10 minutes. Heat a pan with 1 tsp ghee and fry the cashews till it becomes golden brown in color and keep aside. Into the same pan, add oil and the remaining 1 tsp ghee. After ghee melts, crackle cumin seeds. Now add ginger and saute for a minute. Add green chilies and saute for another minute. Add soaked rice into it and mix well. Add water, salt and cook till the rice is done (~8-10 mins in medium flame). Add 1 tsp ghee and garnish with chopped spring onions.
