TOMATO RICE


Ingredients
Basmati Rice - 1.5 cups
Tomato - 4 medium sized, seeded and chopped
Oil - 1 tsp
Ghee - 1.5 tbsp
Ginger-garlic paste - 1/2 tsp
Onion - 2 medium sized, chopped
Green chilies - 2 nos, slitted
Garam masala powder - 1 tsp
Turmeric powder - 1/4 tsp
Red Chilly powder - 1/2 tsp
Salt - 1.5 tsp
water - 3 cups
Coriander leaves



Method
1. Wash and soak rice in warm water for 15 minutes
2. Heat oil and ghee in a heavy bottom pan
3. Once ghee melts, saute ginger-garlic paste for a minute
4. Add the chopped onions, green chilies and saute until onion turns golden brown
5. Add tomato and cook until it becomes soft.
6. Add garam masala, turmeric powder, chilly powder, little salt and cook for 3-4 minutes
7. Add the soaked rice and mix well
8. Add 3 cups of water and salt and cook for nearly 8-10 minutes in medium flame till holes appear on the top of the rice
9. Close the pan with a lid and keep it in sim flame for another couple of minutes
10. Garnish with chopped coriander leaves and serve hot with yogurt raitha
