CHICKEN CURRY || MALABAR STYLE


Malabar style chicken curry is a varutharacha curry with a creamy look and nice aroma.

Ingredients
Chicken - 500 g cleaned and chopped roughly
Onion - 2 medium sliced
Tomato - 1 medium chopped
Green chilies - 2 slitted
Oil - 1 tbsp
Mustard seeds - 1 tsp
Curry leaves - 1 string
Salt to taste
Coriander leaves chopped
For masala:
Oil - 1 tsp
Grated coconut - 1/2 cup
Ginger - 1 tsp chopped
Garlic - 1 tsp chopped
Red chilly powder - 1 tsp
Coriander powder - 1 tsp
Turmeric - 1/4 tsp
Curry leaves - 1 string
Small onions - 7 nos sliced
Cloves - 2 nos
Cinnamon stick - 1 inch piece stick
Cardamom - 2 nos
Whole pepper - 7-8 nos


Method
Fry the masala as below:
Heat oil in a frying pan in medium flame. Fry coconut till light brown. Add the remaining ingredients and roast for 5-10 minutes till the raw smell goes. Allow to cool for 5 mins and grind this mixture by adding little water and keep aside closed.

Heat 1 tbsp oil in a heavy bottomed pan  in medium flame. Add mustard seeds and allow to crackle. Now add curry leaves, sliced onion and green chilies. Saute till the onion turns translucent. Add tomatoes and saute till it turn soft. Now add the chicken, masala paste, salt and mix well. Once it starts to boil, make the stove flame to low and close with a lid and cook till the chicken is done. Add chopped coriander leaves and cook for some more time. Serve hot with chapatti/ghee rice.
