CHICKEN PERATTU || SHALLOW FRIED CHICKEN FRY

Chicken Perattu is my mom's signature dish and is an easy to make, shallow fried spicy chicken fry.

Ingredients
With-bone chicken - 500g cleaned and roughly chopped
Whole red chilly - 8 no.s
Whole coriander seeds - 1 tbsp
Ginger grated - 1 tbsp
Garlic grated  - 1 tbsp
Garam masala powder - 3/4 tsp
Red food color - 2 pinches optional
Salt to taste
Oil - 3 tbsp
To Garnish:
Onion - 1 medium thinly sliced
Coriander leaves


Method
For chicken marinate:
Heat 1 tsp oil in a fry pan and add red chilies, coriander and saute for 2 minutes in medium flame.
Now add ginger paste, garlic paste, garam masala powder and saute for a minute or two. Allow it to cool for 5 minutes and grind once roughly in a mixie can. Add the grinded mixture, red food color, salt into chicken and mix well. Keep aside for 10 minutes if time permits or else can be fried immediately as well.

Heat 2 tbsp oil in a heavy bottomed pan. Add the marinated chicken into it. Mix well and close with a lid for 10-15 mins in medium flame and cook until the water which comes out from the chicken completely evaporates. Mix in between. Now remove the lid and put the stove in sim flame and cook for nearly 15-20 minutes until the chicken becomes a dry fry. If needed add 1tsp oil in between. Garnish with thinly sliced onion and coriander leaves and serve hot with Rice.
