VANILLA APRICOT MICROWAVE CAKE


Thought of preparing a sweet for this year Diwali. So many sweets options were going through the mind and finally decided to bake a cake for this year.

Ingredients
Step 1:
Maida - 1/2 cup
Baking powder - 1 tsp
Salt a pinch
Step 2:
Egg - 1
Powdered sugar - 1/2 cup (Grind in mixie)
Oil - 1/2 cup
Vanilla essence - 1.5 tsp
Milk - < 1/4 cup
Apricot Jam - 1.5 tsp
Cashews - 5 nos (finely chopped)
Walnuts - 3 nos (finely chopped)
Cherry - 3 nos (finely chopped)
Step 3:
Butter - 2 tsp



Method
Sieve step 1 ingredients and keep it separate. (MIX 1)
Now from Step 2 ingredients: Beat egg first, then add sugar and beat again then add oil. Add the MIX 1 and 1/4 cup milk alternately to this. Milk is used to adjust the consistency. Add 1.5 tsp vanilla essence and 1.5 tsp Apricot Jam (smashed with spoon) and mix well. Add Cashews, Walnuts and Cherry and mix two or three times.

Grease a microwave safe bowl with melted butter and pour the cake dough evenly into the bowl. Set the Microwave on high power. Insert the bowl into it and cook for nearly 4-5 minutes. Check using a toothpick or knife after 3.5 minutes. Once the toothpick comes out well the cake is ready. Do not over do, otherwise the cake become powdery.

Remove the bowl from the MW and close it with a tight lid otherwise MW cakes will become dry soon and allow it to cool for 10 minutes. If you want, decorate the cake with fudge topping.
