APPLE UPSIDE DOWN EGG-LESS VANILLA CAKE - FOR P'S BIRTHDAY


Prepared the Apple upside down egg-less vanilla cake for P's birthday.

INGREDIENTS
All purpose flour - 1.5 cups
Apple - 2 + 1 for decoration
Baking powder - 1 tsp
Baking soda - 1 tsp
Salt - 1/2 tsp
Sugar - 3/4 cup + 1/2 cup
Melted butter - 1/2 cup
Oil - 1/4 cup
Yogurt - 4 tbsp
White vinegar - 1 tbsp
Water - 1/2 cup + 1/2 cup + 1 tbsp
Vanilla extract - 1 tsp



METHOD
1. Mix all purpose flour, baking powder and salt in a bowl and keep aside
2. Just melt the butter and when it is warm, add oil, 3/4 cup sugar, mix well and keep aside
3. In a small bowl, add yogurt, 1 tbsp water, vinegar, baking soda and mix till smooth
4. Pour butter mixture, yogurt mixture, 1/2 cup water to all purpose flour mixture, and add vanilla
5. Be quick enough to fold and make a lump free batter, do not over do the folding
6. Boil 1/2 cup sugar with 1/2 cup water to make caramelized sugar and let it cool for 5 minutes
7. Grease a baking tray with butter and oil
8. Arrange sliced 2 apples on the bottom of the tray
9. Now pour the caramelized sugar on top of arranged apple
10. Then pour the cake mix over it, tap or shake the sides of the pan for the air bubbles to escape
11. Pre-heat the oven to 180C and bake for 30-35 minutes or more
12. Bake until a toothpick or fork inserted in the middle put of the cake comes out clean
12. Allow it to cool for 10 minutes
13. Now turn it upside down and decorate with fresh apple slices
